This is why I play under leveled runs in rpgs, or play hard rpgs.
Mario & Luigi : Bowser's Inside Story is a really good action rpg that takes real skill, and the shin megami tensei games can hardly be beaten by grinding. (and grinding it self would get you killed.
But yeah thats a good point.
You can't say you play hard RPGs or under-level runs until you do that in Demon's Souls. I mean seriously, it's frickin' impossible to do it there, but I'd be impressed if you did.
Demon's souls when underleveled is probably the most challenging thing I've ever attempted to do. But it really sticks out with a melee build.
If you go for the cheap and easy way out, just use magic. That can't go wrong. So many of the bosses are easily taken down by magic.
Phalanx - Firestorm, pop dead.
Tower Knight - Blast, hide, repeat.
Penetrator - Let Biorr take all the damage while you spam soul ray/soul arrow.
False King - Firestorm. Hypermode. OVER NINE THOUSAND DAMAGE IN LESS THAN A SECOND. No, really, I did 10035 damage on Allant in one firestorm. No joke. In NG+. (Although, technically, that was in Blue Phantom Form, when I was helping another guy. The host got soulsucked like three times. Poor guy. It's awesome how his soulsucker ability leaves him open to attack.)
Armor Spider - Keep shield up and block fireballs, keep shooting soul arrows.
Flamelurker - Spam soul ray until he keels over.
Dragon God - So easy no matter what build you play.
Fool's Idol - Hide behind pillar, peg her with soul ray.
Maneater - Firestorm. Firestorm. Firestorm. I've taken the maneaters down in a mere two firestorms.
Old Monk - You're usually fighting another player, so no real use-all hints here.
Adjucator - You're actually better off with melee here, but I've taken him down the old-fashioned way with magic. Note that firestorm DOES NOT WORK.
Old Hero - Shoot, hide, repeat.
Storm King - Don't even bother with magic at all here, just grab the stormruler and slice all the manta rays with the awesome sonic boom.
Leechmonger - Go up to Leechmonger and attempt to slash it to death. Leechmonger has a pretty powerful melee attack, actually.
Dirty Colossus - Go up to the boss, and attempt to whack it to death. While getting chewed up by flies.
Maiden Astraea - You actually have to fight Garl Vinland. He's tough, has a hammer that's bigger than you, and, quite literally is a tank. He's immune to magic damage so you'll have to take a while to whittle him down. Note: He casts miracles in body form.
And with a melee build?
Phalanx - You'll have to run around and kill mini-phalanxes to open up his armor, and THEN you can finally take him down.
Tower Knight - You'll have to slash at his ankles in the hopes of making him fall down. Then you have to go to his head and whack it as much as you can.
Penetrator - Penetrator always damages you if he hits you. Period. He has a huge reach, too.
False King - Whack him between his strokes, honestly, false king is not that hard.
Armor Spider - Keep shield up and go through a long process of going up to Armor spider, it slashing you several time with its fangs, then exposing its head.
Flamelurker - Go up to him and slash at him. Then retreat to recover stamina. Repeat. However, Flamelurker kicks your ass in only a few hits.
Dragon God - So easy no matter what build you play.
Fool's Idol - Hide behind pillar, then rush up to her and hope you don't get skewered by magic.
Maneater - You'll have to fight two maneaters that break your guard, cast magic, and knock you off the stage. Good luck..
Old Monk - You're usually fighting another player, so no real use-all hints here.

Old Hero - You'll have to go up to the Old Hero and start slashing his flanks, then run away and hope he doesn't cleave you. Good thing he's blind.
Storm King - Easy for everyone.

Dirty Colossus - Strafe & fire spray.
Maiden Astraea - Spam fire magic on Garl Vinland until he keels over, then talk to Astraea, she'll commit suicide.
Of course, I only know this because I play a high-powered magic build. Yay.
Anyway, playing an underleveled run is not necessarily hard if you use magic. It's not like you're going to be that much weaker, you're just going to have to be mroe careful and take longer to kill enemies. That's all.
